Raw Beetroot Salad

I should be working, I turned on the computer with the intention of working.  But am I? Errr no.  Since turning the computer on I’ve checked my emails (well that was sort of working) but mostly I’ve making changes to my AFL dreamteam and now here I am composing a quick post about Beetroot Salad.

I like cooked beetroot salads but I also like them made with raw beetroot.  Particularly finely shredded like this:

It took me a while to choose this picture (more procrastination) and I’m still not sure I chose the best one.  I do like the texture of the trampoline the salad is sitting on though….

This salad is really simple – grated beetroot dressed in a vinaigrette with a bit of horseradish grated through it.  I make my vinaigrette for beetroot with a one part acid – usually lemon juice, to 3 parts oil and a dash of dijon mustard thrown in for good measure.  To this I added the horseradish, seasoned it and then dressed my beetroot.

Really quick, really enjoyable and good and crunchy.

  1. Does the beetroot bleed lots when grated raw as it doesn’t appear to have lost its colour.

    I like to grate fresh beets and add it to salads as well. Adds color and great taste. A salad of grated beets solo should be very yummy.

    I’ve finally been brave and bought my first beetroots today! I am going to try and give them a go as I have had a couple of dishes this year which I found to my amazement I actually liked…Need to look back through your posts for some ideas but will start with this little grated number-though without the horseradish-another one on my ‘phobia’ list…

      So have you tried horseradish and not enjoyed it or are you scared to try. I too have a few food phobias but they are all slimy or crunchy – ie oysters and prawn shells.

      • I had a bad experience many, many years ago when I took a big bite of what I thought was cream cheese on a cracker at a ‘do’ and found it had been mixed with horseradish-very unpleasant…I just remember going hot and cold and feeling so awful plus the social embarrassment of the whole thing…
        Mind you is fresh horseradish different to the stuff that comes in jars now I wonder??

          The fresh horseradish is different, less vinegary and fresher tasting – but it is still hot and can hurt some people’s sinuses. My 5 year old came very close to putting a whole lump of wasabi in her mouth last time we went for Japanese – she thought it was avocado, so I can fully understand how these incidents can arise…

    I make a raw beetroot salad every time I do a demo!
    Mine has beetroot, 1/4 red onion, apple, carrot, lemon juice and the remnants of a garlic and herb dip (for salad dressing). It’s absolutely delicious. I love raw beetroot!

    I tried growing them once, but they really didn’t grow.
    It took me a while to work out what you meant by trampoline, oh derr. Love it that you use whatever is available. The salad looks great.

      They can be a bit tempermental in winter when their growth can stall but at other times of the year they are pretty easy. If you can be bothered I’d definitely try again.

    Yum, I think the only thing I like better than eggplants is beetroot! I wish I had some ready to pull and eat.

      I know I seem to have a beetroot gap too, I have now run out and have only jsut remember to sow some more seed. Very neglectful…
