Thursday Garden Gobbles – Corn Fritters

I have posted on the subject of fritters before.  I am something of a fan it has to be said.  There are very few vegetables that don’t fritter well in my view (although I’m not completely convinced by beetroot but I suspect that is the exception that proves the rule….oh and cucumber, I really don’t like the idea of a cucumber fritter.  Otherwise though fritters rule!  So much so that I turned my first corn harvest of the year into some.

I planted my corn a bit late this year but its lovely to be finally getting some and I have to say it made for delicious fritters.  (This is an old photo I have to admit today’s batch were served with a tomato and olive salad and were wolfed down in double quick time before I could even think of pausing to photograph them).

    Yum yum yum! Have you only used red beets in fritters? I wonder if golden beets would be better. But I agree that cucumber fritters don’t sound good at all.

      Yes i think it is. Although you could also call some pakoras fritters and indeed onion bhaji’s are kind of fritterish too.

  6. Definitely worth repeating! Corn seems such a long way off here, it may be worth spelunking in the chest freezer to see if there’s any frozen left…

    I to am a fritter fan and pretty much lived off zucchini fritters with sweet chilli and soy sauce. I love corn fritters too- Corn, Kumara and bacon fritter are a specialty where I come from (Dargaville or the Kumara capital of New Zealand). Your corn looks really well pollinated too.

      I do like the corn, bacon and kumara fritter idea sounds great! I will have to give it a try when my sweet potato is ready.

    I missed the original fritter post but I would have said the same thing then as I do now: mmm those look good! Count me as a fritter fan too, so easy and versatile.

    Fritters are one of the few foods that the whole family agree on – they’re really good. We’ll be using your corn fritter recipe soon.

      It is one of the few things that I cook for breakfast, lunch or dinner – hugely versatile and generally well received by the small picky ones.

    Liz, tell us your corn growing secrets. Two years in a row my heads have been a disappointment. And I’m just down the road!

      Tim I’m not sure I have any. I plant my corn pretty close together, never thin the seedlings and then just wait and see what happens. i can’t even tell you what variety I grew this year and the seed packet is helpfully labelled: “substitute for Legacy HM2390”. I sowed my seed pretty late – I think it was probably in November. Perhaps the warm weather helped pollination?

    I’ll try these fritters for sure as I have a corn glut, at the moment. I planted a lot later this time than previously and I was getting worried that they would be a bust but suddenly I have more than I know what to do with! Nothing tastes better than corn straight from the garden.

      It is great isn’t it. I’m planning some bbq corn and capsicum salads for this week as they seem to be what my garden is throwing up at the moment.

    So delicious. I can gobble them quick. Our corn harvest is not that enough to satisfied my 2 cheekie monkies. They like to eat fresh raw corn straight-away. Hopefully if we have more harvest will like to try corn fritters too.
